When the tomatoes keep coming... September 23 2012


It's been a prolific year in the garden to say the least. The last few seasons have not been great, so I went over board with the tomatoes this year; insurance for a few juicy heirlooms.



There is nothing better than plucking that first sweet tomato off the vine, secretly indulging, not willing to share. And then they start coming by the bowl full...

This year assortment: Japanese Black Trifle, Black Krim, Mr. Stripey, Cherokee Purple, Early girl, Red Plum, Roma, 2 Sun Sugar cherries, and 2 Sweet Million cherries. We have A LOT of tomatoes!

Harvesting alone has been a time consuming chore, but then comes the issue of what to do with them all! Sure, eat them, sauce them, give them away- but how much sauce do you really have room for in your freezer? This year, per the suggestion of my lovely friend Heather, I headed down to Sur la Table,  picked up a dehydrator, and its been running ever since!

Slice and dry. That's it. No oil, no salt.... just tomatoes and time.
